Ingredients:
- 4 large bell peppers, halved and seeds removed
- 1 pound ground turkey
- 2 cups cauliflower rice
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructions:
Preheat the oven to 375F 190C
In a skillet, heat olive oil over medium heat
Add diced onion and minced garlic, cook until softened
Add ground turkey and cook until browned, breaking it apart with a spoon
Stir in cauliflower rice, Italian seasoning, salt, and pepper
Cook for another 5 minutes
Remove from heat and let it cool slightly
Spoon the turkey mixture into the halved bell peppers, filling each pepper evenly
Sprinkle shredded cheddar cheese on top of each stuffed pepper
Place the stuffed peppers on a baking sheet lined with parchment paper
Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly
Garnish with fresh parsley if desired before serving
