Ingredients:
- 4 chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cups sliced mushrooms
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
Instructions:
Preheat oven to 375F 190C
Season chicken breasts with salt and pepper
Heat olive oil in a large oven-safe skillet over medium-high heat
Add chicken breasts and cook until browned on both sides, about 3-4 minutes per side
Remove chicken from skillet and set aside
In the same skillet, add mushrooms and garlic
Cook until mushrooms are tender, about 5 minutes
Stir in heavy cream and Parmesan cheese, and bring to a simmer
Return chicken breasts to the skillet, spooning some sauce over them
Transfer skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through
Garnish with chopped parsley before serving
