Ingredients:
- 3/4 cup cold water
- 3 tablespoons unflavored gelatin
- 2 cups granulated sugar
- 2/3 cup corn syrup
- 1/4 teaspoon salt
- 2 teaspoons pure vanilla extract
- Powdered sugar, for dusting
Instructions:
Pour in half a cup of cold water into a mixing bowl and then top with the gelatin
Give it ten minutes to settle
Add the corn syrup, salt, granulated sugar, and the remaining 1/4 cup of cold water to a saucepan
Cook until the mixture reaches 240F 115C over medium heat
After adding the hot sugar mixture to the gelatin mixture, beat on high speed for ten to twelve minutes, or until the mixture thickens and becomes frothy
Beat for an extra two minutes after adding the vanilla extract
A 9 x 9-inch 23 x 23 cm baking dish should be greased and dusted with powdered sugar
Using a spatula, smooth the top of the marshmallow mixture after transferring it into the prepared dish
Allow it to settle for four hours or overnight at room temperature
When the marshmallows are set, cut them into squares and sprinkle more powdered sugar on top to keep them from sticking
