A tasty one-pan meal that combines the flavors of turkey tacos with the health benefits of quinoa. This skillet dish is a quick and easy way to make dinner on a busy weeknight. It's full of protein, fiber, and colorful vegetables.
Ingredients:
- 1 lb ground turkey
- 1 cup quinoa, rinsed
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 can 14 oz diced tomatoes
- 1 cup shredded cheddar cheese
- 1 tablespoon taco seasoning
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro and lime wedges for garnish
Instructions:
In a large skillet, brown the ground turkey over medium heat
Add diced onion, bell pepper, and minced garlic to the skillet
Cook until vegetables are softened
Stir in rinsed quinoa, black beans, corn, diced tomatoes, taco seasoning, cumin, chili powder, salt, and pepper
Pour in 2 cups of water
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until quinoa is cooked and liquid is absorbed
Sprinkle shredded cheddar cheese over the top and cover until the cheese is melted
Garnish with fresh cilantro and serve with lime wedges
